Veggie Stock Powder

After struggling to find a good quality vegetable stock powder that doesn’t contain any nasties and wasn’t crazy expensive, I decided to try and create my own. I was pleasantly surprised with the outcome. This stock is super flavoursome, easy, inexpensive and the bonus is you know exactly what is going into it.

This stock has quite a few ingredients, most of which are pantry staples, but for the spices I don’t use regularly (and the ones I use daily) I like to go to a bulk food store, that way I can get the exact amount I need. This works out to be much cheaper and cuts down on waste so it’s a win-win situation.

Ingredients

  • 2 tbsp dehydrated carrot powder*

  • 2 tbsp celery seed

  • 4 tbsp dried parsley

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp black pepper

  • 2 tsp dried thyme

  • 2 tsp dried sage

  • 2 tsp turmeric powder

  • 2 tsp nutritional yeast

  • 2 tbsp Celtic sea salt

* to make dehydrated carrot powder I thinly slice the carrot and place the pieces, as well as the green tops, on a dehydrator tray. Once they are fully dry I place them in my high speed blender and blend until they are a powder. Store in an airtight jar or container until you are ready to make your next batch of stock (8 carrots with tops will make about 1/3 cup carrot powder). If you don’t have a dehydrator you can leave this step out, it will still taste great, I just like to add it for a little extra veggies.

Directions

Add all the ingredients into the blender and blend until the herbs are super fine and well combined with the salt. Store in an airtight jar or container.

Add 1 tsp of stock powder for every 2 cups of water.
