No-bake Molasses Muesli Bar
Ingredients
1 batch of pan-toasted muesli
1/4 cup of coconut oil
3 tbsp raw honey
vegan/dark chocolate (dairy-free)
Directions
Step 1
Place 2 cups of muesli into a food processor and blend until fine.
Step 2
Mix through the coconut oil and honey until everything is throughly coated. The easiest way to do this is by using a fresh batch of muesli that it still warm, so everything melts through nicely. Alternately you can pre-melt your coconut oil to make sure it is already liquified or lightly heat the the muesli over the stove top again.
Step 3
Line a slice tin with baking paper. Firmly press mixture into the slice tin.
Step 4 (optional)
If the muesli is warm, roughly chop the chocolate and sprinkle it over the top, allow chocolate to melt in before placing in the fridge.
If the muesli is cool, melt the chocolate first and drizzle over the top.
Step 5
Place in the refrigerator until firm.
Cut into pieces. Store in fridge.
