Pan-Toasted Muesli

Ingredients:

  • 1/2 cup almonds

  • 1/2 cup cashews

  • 1/4 cup pepitas

  • 1/4 cup sunflower seeds

  • 1 1/2 cups oats

  • 1/2 cup shredded coconut

  • 1/4 cup goji berries

  • 3/4 cup dried fruit of choice (I used apricot, apple and sultanas)

  • 2 tbsp cacao nibs

  • 1/4 cup unhulled tahini (you can use hulled if thats what you have on hand)

  • 3 tbsps molasses


Directions

Step 1

Roughly chop the nuts and place them into a large fry pan with the pepitas and sunflower seeds. Toast for a few minutes over medium heat. Turn the heat down to low, add the oats, continue to toast until it starts to become a light golden brown.

NOTE: continue to stir throughout the whole process. Nuts can go from being not cooked to burnt very quickly!

Step 2 

Add the coconut, goji berries, dried fruits of choice and cacao nibs. Mix.

Step 3 

Mix in the tahini and molasses until every thing is well coated.

Step 4 

Allow it to cool before storing in an airtight container or jar. Serve with nut milk or coconut yogurt and fruit or throw it on top of your favourite smoothie bowl.
