Toasted Coconut Muesli

Ingredients

  • 8 cups flaked coconut

  • 1 cup almonds

  • 1 cup cashews

  • 1/2 cup pepitas

  • 1/2 cup sunflower seeds

  • 1 tbsp cinnamon

  • 1/4 tsp vanilla powder

  • 1 tbsp maple syrup (optional)

Directions

Step 1 

Pre-heat the oven to 180°C.

Step 2

Roughly chop the almonds and cashews.

Step 3

Spread the coconut flakes onto a large baking tray. Mix through the chopped nuts, pepitas, sunflower seeds, cinnamon, vanilla and maple syrup if you want it a little sweeter.

Step 4 

Place in the oven for 5 minutes, until the coconut is nicely golden brown. Remove from the oven and stir, place back into the oven for another 5 mins. Repeat toasting and stirring 4-5 times until all the coconut is evenly toasted throughout. The larger your tray the better, this will allow you to spread the muesli thinner so you won’t have to turn it so many times.

** make sure to set a timer and watch closely, the muesli can go from perfectly toasted to burnt very quickly.

Step 5

Allow to cool and store in an airtight jar or container.

Serve with fresh fruit, berries and a plant-based milk or yogurt.
